As farmers switch to growing more corn and fewer quantities of other crops, some consumers are anticipating future food shortages. Some, in fact, have even begun hoarding rice. In our May issue of Food, Nutrition & Science, we asked our readers what food shortages they expect consumers to face most by the end of 2008. Here are the results:
Thirty-one percent predicted wheat as the biggest food shortage, while soy and rice tied at 16%. Ten percent of the votes went to dairy, beef received nine percent of the votes, and shellfish, fin fish, and bread all received five percent. And finally, three percent picked poultry. Only one percent chose pork.
